Course Goals

(As provided by American University course HLTH 630 Nutrition Education Methods)

  • Provide an understanding of the numerous influences on food choice and dietary practices of consideration in nutrition education.

  • Describe the differences between action- and behavior- based nutrition education programming.

  • Identify the key theories involved in behavior change and discuss how these theories can be translated into effective nutrition education.

  • Present strategies for designing an effective, engaging nutrition education class with effective teaching methods.

  • Outline and detail the systematic stepwise procedure for designing nutrition education that applies theory to practice with consideration of personal psychosocial determinants and environmental factors that are potential mediators for change.

Here are the questions that needed to be addressed from the professor:

  • Who was your target audience? How many people were present for the program?

  • Discuss your overarching health issue and nutrition-related behavior of focus, as well as the four constructs (2 from motivational theories and 2 from facilitating action theories) you focused on.

  • What were your educational strategies and how well-received were each of the educational strategies?

  • What could you have done differently to improve your educational strategies?

  • What kinds of materials/visual aids did you use? How would you change these when you present again?

  • What are 5 questions you could ask your participants to gauge the effectiveness of your program?

  • As you reflect on these questions, critically assess your own biases, conceptions and abilities. Demonstrate through the review how your experience contributed to your understanding of yourself and the course. Please go beyond a simple overview, and analyze how you could improve your future lessons.
