As the program goes on more time may be spent on one module over the other as the students begin to understand the importance of including fruits and vegetables in their diet. This program is designed to create an interactive learning experience among the students with a mixture of critical thinking. The order of the program will be lecture and discussion, teaching the students how to measure their fruit and vegetable intake so they are getting the proper amount, and finally teaching them how to prepare meals that focus around fruits and vegetables.<\/p>\n<h3>Vegetables, fruits, and you<\/h3>\n<ul>\n<li>This module is designed to be a lecture and discussion session of the program. Each lecture will discuss why fruits and vegetables are important to our health and why it may seem to be that students are not getting enough.<\/li>\n<li>A discussion will be held at the end of the lecture to see what students have learned, any ideas they had, and to address any concerns or questions the students may have.<\/li>\n<\/ul>\n<h3>What&#8217;s the right amount?<\/h3>\n<ul>\n<li>Teachers will use choosemyplate.gov to show students how to figure out how much fruits and vegetables they should be getting in their daily diet.<\/li>\n<li>Teachers will then teach students how to know what a proper serving size is by also using the choosemyplate.gov site and by showing real life examples.<\/li>\n<li>Teachers will teach students how to use Cronometer app to safely track their nutrition intake.<\/li>\n<\/ul>\n<h3>Lets get cooking<\/h3>\n<ul>\n<li>Teachers will teach students kitchen safety and sanitation, how to properly use a knife, and quick and ways to prepare fruits and vegetables.<\/li>\n<li>Teachers will provide useful sites that students can go to for recipes and videos.<\/li>\n<\/ul>\n<h2><strong>The Training Component<\/strong><\/h2>\n<p>Teachers in Access Fresh will be taught the necessary skills required to present the Access Fresh program. The main reason I have chosen these categories is because I want to ensure this program is reaching as many seniors as possible and is designed to be something that they are excited about. This program is to be designed with the seniors in mind and while I have a general idea of what I want to do, the information I get back from the process evaluation will help me include more activities that appeal to seniors and help me figure out how to get knowledge of my program out to seniors in the area.<\/p>\n<p>To ensure this program becomes best suited for seniors in the area my questions will be: Which part of the program did the students enjoy the most and is there something else they would have liked to do (dose received), do you feel as though you were able to distribute information to the students in an effective manner (dose delivered), was the program site easily accessible to the participants (context), were you able to get students from 4 of the 9 high schools in the area (reach), and how did the students find out about the program, is there another way they think you could reach more seniors (recruitment)? For this evaluation to work, I will need to create a sign-up sheet, end of the course survey, and have a camera to record sessions. The sign-up sheet will ask how they students heard about the program and what school they attend. The survey will ask them what they thought of the activities or if they thought something else would have been more enjoyable, if they found it easy to reach the program site, and how they would suggest reaching more seniors in the area. The final part of the plan is recording my sessions and watch them after each lesson to take notes on how I think the lesson went and what I could do better. In the United States only about 12.2% of the population meets the daily fruit recommendation and only 9.3% are getting their vegetable intake (CDC, 2018). In the state of Michigan about 43% of the adolescent population consume less than one serving of fruits and vegetables in a day (CDC, 2017). In Kent County, Michigan this number goes up to 74% of high school students consuming less than one serving of fruits and vegetables per day (London, 2017). The population of Kent County is about 656,955 with 23.9% being under 18 years old (U.S. Census Bureau, 2018). This means that in Kent County there are around 157,012 people under 18 years old, out of that number 74% are not getting the proper fruits and vegetable intake. Based on those numbers, 116,189 adolescents are not getting the nutrients that fruits and vegetables provide, that is 18.5 Wings Event Center\u2019s full of adolescents. This is a problem because adolescents are in a critical period of life where behavioral risk factors associated with chronic disease, such as a diet lacking fruits and vegetables, may follow them into adulthood and is something they may pass down to their families (Ziaei, Shahi, Dastgiri, Mohammadi, &amp; Viitasara, 2019).<\/p>\n<p>Access Fresh is a proposed program designed to educate high school seniors on the importance of including fruits and vegetables in their diet, how they can gain access to them, and teaching them the proper techniques to ensure they are reaching the recommended nutrient intake. Using the Downtown Market in Grand Rapids will provide a safe space among many fresh food sellers to help provide students with a more in-depth experience. The long-term goal of this program is to teach these students techniques that they can use to develop healthier habits that will be passed down to their families. This program will work to address the intrapersonal, interpersonal, environmental, and sectors of influence levels of the social-ecological model on behavior change. This approach is used in many different levels to address many influences in a person\u2019s life that affect their behavior (Contento, 2016).<\/p>\n<p>This program will provide thoughtful discussions and lectures on fruits and vegetables so students may evaluate their intake and the importance of including a wide variety of them in their diets. The students will be educated on places where they can access fruits and vegetables within their community and how working with places, such as the Downtown Market in Grand Rapids, can give back to the local businesses and give back to the community. Safe nutrition tracking will be taught so students can make sure they are reaching their recommended intake of nutrients each day. In addition to all that, Access Fresh will make use of the kitchen in the downtown market in Grand Rapids to provide minor cooking lessons to these students on preparation for fruits and vegetables. Cooking lessons are shown to be a great way to improve food literacy and fruit and vegetable consumption (Garcia, Reardon, Mcdonald, &amp; Vargas-Garcia, 2016).<\/p>\n<p>This program looks forward to improving the health of the Kent County students and generations to come, while teaching them how using local resources can bring about a greater community.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>References<\/strong><\/p>\n<p>Centers for Disease Control and Prevention. The objective of this program will be to get these seniors to include more fruits and vegetables into their daily lives.<\/span><\/p>\n<ul>\n<li><strong>Process Objectives: <\/strong>This program will focus on lecture and discussions on fruits and vegetables, showing proper ways to track their nutrition intake, and cooking courses to show students how to safely make great meals from fruits and vegetables.<\/li>\n<li><strong>Impact Objectives:<\/strong>\n<ul>\n<li><strong>Learning:<\/strong> The learning objectives of this program will be to teach the students why it is important to include fruits and vegetables in their diet, how to make sure they are getting the right amount, and how to effectively prepare meals that include them.<\/li>\n<li><strong>Behavioral:<\/strong> The behavioral objectives of this program will to have students not only begin to include more fruits and vegetables in their diets, but also to begin cooking their own meals and tracking their nutrition intake.<\/li>\n<li><strong>Environmental:<\/strong> The environmental goal will be to have them rise above the effects of peer pressure and choose healthy foods over indulging in processed foods for a majority of their time when with friends. This program and site will eventually evolve to teach students how to track their dietary intake and easy recipes they can make themselves to set them up for when they go off to college. The blog will become filled with videos about kitchen safety and tutorials for easy made meals. Right now this program design will be addressing the lack of fruits and vegetables in the diets of high school students as in Kent County it was discovered that in 2016 only 26% of high schoolers ate five or more servings of fruits and vegetables per day (London, 2017). The intended<\/p>\n<h2><strong>My Why<\/strong><\/h2>\n<p>I want to work with high school seniors because if they decide to go away to college then they will oversee their own nutrition intake and will build habits that can last for the rest of their life (Deforche, Dyck, Deliens, &amp; Bourdeaudhuij,\u00a0 2015). I think it is important to teach high schoolers the importance of monitoring their food intake in general even if they don\u2019t go away to college because eventually they will be on their own for making diet choices and will pass these choices onto their own families eventually. I also have the benefit of seeing what has happened to those who don\u2019t know how to monitor their nutrition intake which makes me want to educate high schoolers before they are on their own.<\/p>\n<h2><strong>Program Summary<\/strong><\/h2>\n<h3 style=\"margin-top: 0in;background: white\"><b><span style=\"color: #3a3a3a\">Looking at Activities<\/span><\/b><\/h3>\n<p style=\"margin-top: 0in;background: white\"><span style=\"color: #3a3a3a\">This program will work to address the lack of fruits and vegetables in the lives of high schoolers by addressing the interpersonal, intrapersonal, and environmental influences on their food choices. On the intrapersonal level this program will work with a combination of lecture and discussion to improve their self-efficacy in preparing and eating fruits and vegetables (Contento, 2016). This program will also work to expand their knowledge on the benefits of eating fruits and vegetables. The interpersonal level will work with hands on experience to teach high schoolers quick and easy recipes that they can prepare on their own to give them more control of their food at home and feel confident in asking their parents to buy them certain fruits and vegetables (Contento, 2016). In addition to the hands-on cooking, this program will work with kids to learn about tracking their nutrition intake through apps to ensure they are getting the nutrition they need, this is something they can use with their parents to simplify their diet intake (Contento, 2016). This should also help with their environmental factor as they can educate their parents on what they have learned. The biggest environmental factor will be a lesson on how high schoolers can navigate their school lunch rooms to choose more fruits and vegetables if they decide to buy their food, or using the cooking sessions to show them how simple it is to prepare fruits and vegetables to bring as a snack.<\/span><\/p>\n<p>To ensure these activities are able to be taught effectively, the location of this program will be at the Downtown Market in Grand Rapids. This is a space with meeting rooms for lectures and learning how to track nutrition, along with a teaching kitchen to learn how to make simple meals with fruits and vegetables. The downtown market is located downtown Grand Rapids and can be easily accessed for many kids in the area as our buses make stops there, this makes it accessible to kids who may not have their own car.<\/p>\n<h3 style=\"margin-top: 0in;background: white\"><b><span style=\"color: #3a3a3a\">Overall Impact<\/span><\/b><\/h3>\n<p style=\"margin-top: 0in;background: white\"><span style=\"color: #3a3a3a\">\u00a0I want this program to make high schoolers think about the foods they put in their bodies, how it affects them, and how they can track what they are eating.
