Complete and Acceptable Delivery

To be fully implemented Access Fresh will consist of three curriculum modules and a teacher training component.

The Curriculum Modules

The Access Fresh program will include three primary curriculum modules —Vegetables, fruits, and you, What’s the right amount, and Lets get cooking—and is designed to be delivered over a 6-week period with an average time of 1.5 to 2 hours per week in session with the seniors. As the program goes on more time may be spent on one module over the other as the students begin to understand the importance of including fruits and vegetables in their diet. This program is designed to create an interactive learning experience among the students with a mixture of critical thinking. The order of the program will be lecture and discussion, teaching the students how to measure their fruit and vegetable intake so they are getting the proper amount, and finally teaching them how to prepare meals that focus around fruits and vegetables.

Vegetables, fruits, and you

  • This module is designed to be a lecture and discussion session of the program. Each lecture will discuss why fruits and vegetables are important to our health and why it may seem to be that students are not getting enough.
  • A discussion will be held at the end of the lecture to see what students have learned, any ideas they had, and to address any concerns or questions the students may have.

What’s the right amount?

  • Teachers will use choosemyplate.gov to show students how to figure out how much fruits and vegetables they should be getting in their daily diet.
  • Teachers will then teach students how to know what a proper serving size is by also using the choosemyplate.gov site and by showing real life examples.
  • Teachers will teach students how to use Cronometer app to safely track their nutrition intake.

Lets get cooking

  • Teachers will teach students kitchen safety and sanitation, how to properly use a knife, and quick and ways to prepare fruits and vegetables.
  • Teachers will provide useful sites that students can go to for recipes and videos.

The Training Component

Teachers in Access Fresh will be taught the necessary skills required to present the Access Fresh program. Their training will be done one month before the program begins with a meeting each week after to go over what they learned and how they feel about the upcoming program.
The training will include:

  • Having a mix of teachers that have a background in culinary, are good with technology, have a good understanding of a healthy diet, and have had prior teaching experience.
    • This is important to training as they can provide help to those who may not be as skilled in other areas
  • Demonstration of activities planned
  • Overview of lecture
  • Running through the program to show the teachers what to expect and having teachers give feedback on what went well and what could be worked on
  • Role play of things students may discuss or possible events that may happen
  • Team bonding and ways to help build on each others strengths

Evaluation Questions

Reach Did you have representation from at least 4 of the 9 schools in the Grand Rapids school district? Assessment will be done through signup sheet and will ask what high school they go to. The signup sheet will be provided on the website and will go to a database on the computer for me to review.
Fidelity Did the teachers in the program feel prepared to teach on the subject matter? Survey passed out to teachers asking what if they thought they were prepared to teach this program and if there was anything they would have done differently. Survey to email out to the teachers at the end of the program.
Context Was the location of the program in a site easily accessible to students? Assessment will also be done through a survey passed out and will ask if they felt it was easy to get to the program site for lessons. Will need a printout of the survey and pens.
Dose Delivered Do you feel as though you were able to distribute information to the students in an effective manner?

Were the students paying attention to what was happening, or did they seem distracted?

I feel this assessment will be best completed through recording the lessons and looking back at them after the lessons and evaluating how the lesson looked. For this portion I would need to get a camera to record or use my phone and then something to hold the recording device on. Forms for the students to sign will also be needed to let them know I will be recording the classes for future improvement.
Dose Received Which part of the program did the students enjoy the most? Assessment will be done once program is completed through a survey passed out asking what their favorite part of the program was. Will need a printout of the survey and pens.

 

After careful consideration, the final questions for the process evaluation plan will come from: dose received, dose delivered, context, reach, and recruitment. The main reason I have chosen these categories is because I want to ensure this program is reaching as many seniors as possible and is designed to be something that they are excited about. This program is to be designed with the seniors in mind and while I have a general idea of what I want to do, the information I get back from the process evaluation will help me include more activities that appeal to seniors and help me figure out how to get knowledge of my program out to seniors in the area.

To ensure this program becomes best suited for seniors in the area my questions will be: Which part of the program did the students enjoy the most and is there something else they would have liked to do (dose received), do you feel as though you were able to distribute information to the students in an effective manner (dose delivered), was the program site easily accessible to the participants (context), were you able to get students from 4 of the 9 high schools in the area (reach), and how did the students find out about the program, is there another way they think you could reach more seniors (recruitment)? For this evaluation to work, I will need to create a sign-up sheet, end of the course survey, and have a camera to record sessions. The sign-up sheet will ask how they students heard about the program and what school they attend. The survey will ask them what they thought of the activities or if they thought something else would have been more enjoyable, if they found it easy to reach the program site, and how they would suggest reaching more seniors in the area. The final part of the plan is recording my sessions and watch them after each lesson to take notes on how I think the lesson went and what I could do better. I will implement what I watched into the next lesson and continue to adjust as I see fit.
